Sunday at the park there was fat old man dressed in black smoking BBQ beef and pork ribs.
You could smell his meat spice rub and flavors a mile away.
I went up to the man in black and asked if his name was really Old Smokey.
He answered… “Yes and among other things.”
I asked him what the optimal time and temperature is for smoking BBQ beef and pork ribs?
And he told me 250 degrees Fahrenheit for 2 and 1/2 hours.
But this answer did not sound right.
I’ve been smoking meats for years and know that when smoking beef,

So I changed my question and asked Old Smokey this..
I said…

BBQ ribs ever, how long and at what temperature would you smoke
them at?”
And this time his answer was different.
He said “I would smoke them all day long at 150 degrees.”
Bingo!
This was the REAL answer I was looking for.
